Blueberry Banana Bread

I love this recipe so much, banana bread is one of my favorite baked treats, and this one has the added deliciousness of blueberries, making it extra special. It is very healthy as there is no oil and no refined sugar. If you use gluten free oats, it makes this bread gluten free as well! It is the perfect texture for banana bread, not too dry and not to gooey and just the perfect level of sweetness for me. It’s vegan of course and oh so delicious!

Prep Time: 10 minutes 

Cook Time: 65 minutes

FOR THIS RECIPE YOU’LL NEED:

  • 2 1/2 cups of rolled oats flour

  • 3 very ripe bananas mashed

  • 2 flax eggs

  • 3/4 cup coconut sugar

  • 1/4 cup nut butter (almond, peanut, cashew, etc. I recommend almond butter) 

  • 1 tbsp baking powder

  • 1 tsp vanilla extract

  • 1 tsp apple cider vinegar

  • pinch of salt

  • 1/2 cup frozen or fresh blueberries

PREPARATION: 

  1. Begin by pre-heating the oven to 350º Fahrenheit.

  2. Make the 2 flax eggs by mixing 5 tbsp of water together with 2 tbsp of ground flax  and letting sit for five minutes until a gel like consistency forms.

  3. Grind the oats in a blender or food processor on high for a few seconds or until a very fine flour forms.

  4. Mash the bananas until a runny consistency has formed and there are few lumps left.

  5. Add all dry ingredients( oat flour, coconut sugar, baking powder, & salt) to a large bowl and whisk together.

  6. Add all wet ingredients ( mashed banana, flax egg, nut butter, apple cider vinegar & vanilla extract) to a large bowl and mix together until fully combined. 

  7. Make a well in the center of the dry ingridients and pour the wet into it. Mix together until fully combined. This may take a little effort as the dough for the bread is quite thick but don’t add any liquid just keep on mixing until all the flour is combined.

  8. Add the blueberries to the mixture and stir in gently.

  9. Grease a bread pan with vegetable, coconut, or olive oil and pour the mixture into the pan, making sure to smooth the top with the back of a spoon or a spatula. *Optional sprinkle with 1/2 tsp of coconut sugar for extra loveliness.

  10. Bake in the pre-heated oven for about 65 minutes or until a knife comes out clean without any uncooked batter(this may take slightly more or less time depending on your oven).

  11. Once the banana bread has finished baking, remove it from the oven and let it cool in the pan for at least ten minutes before cutting into it. Resist the temptation ;) !

  12. Once the bread has cooled, you can cut into it and enjoy!

  13. Store at room temperature in a sealed container for up to five days.
